We provide the highest quality extra virgin olive oil with white and black truffle. The concentration of the truffle in the oil is extremely high, with truffle shavings clearly visible in the bottle. Istrian truffles are considered some of the best in the world, although this is not yet widely known outside of the specialist trade press. We will also be importing fresh white and black truffles during the truffle season of October - December. Outside of this period we provide pasteurised truffles, sealed to maintain freshness, as well as fresh truffle pastes and sauces.
In Istria truffles have been extracted since ancient times, Roman Emperors and Austro-Hungarian aristocrats knew about them due to their outstanding taste and alleged aphrodisiac characteristics. Grey clay soil of central Istria and a mild climate without significant temperature oscillations provide ideal conditions for a very delicate fruit of Tuber Magnatum Pico, more famous as the white truffle, the biggest and the most respected of all truffles. Except in Istria, truffles can be found in some regions of Italy and France.
Truffles have a delicate taste, partly nutty, partly mushroomy, and are a highly prized delicacy among the foodie fraternity. They need to be used sparingly in cooking, either grated over a freshly cooked dish or used to give the defining flavour to a sauce.
Small pieces of truffles are used to infuse olive oil. Croatian olive oil is optimal for truffle infusion because it does not overpower the subtle truffle flavouring.
